On the rail is the weight of the carcass before it is cut into steaks, roasts, etc. The price you pay is based on this weight.

Off the rail is the weight of the meat you take home - after the bones and trim have been removed, and carcass has been cut, wrapped and frozen and sausages have been made. This weight can be 60 - 70% of the "on the rail" weight, however the bones, organs and trim are yours to keep if you want.

"Off the rail” price ranges from $5.10/lb to $5.50/lb for beef ($6.50/lb to $7.00/lb for pork), depending on the size of your order

When ordering  half and full size orders you can get a cutting instruction sheet to fill out to have the animal cut according to your preferences.

An additional fee for sausage ( $1.38 - $1.87/lb) , burger patties($0.75/lb), old fashioned jerky($2.53/lb) and vacuum package( $0.51/lb) will be charged by the butcher.
